Chocolate Covered Peanut Butter Balls
I was having a conversation with some of my mom-friends today, and I asked them if they were having post-pregnancy food cravings. Almost unanimously they chimed in, "Chocolate!" Since I've been having a nightly chocolate craving lately (although my husband says that this isn't unique to my post-pregnancy state), I found this quick and easy recipe from cooks.com. With the exception of one that my husband ate, I finished off the whole batch! I post the recipe here for your enjoyment.

Chocolate Covered Peanut Butter Balls
1 1/2 c. powdered sugar
1 c. peanut butter
1/2 stick butter, melted
4 tbsp. canned cream
1 tbsp. vanilla
1/2 tsp. salt
Mix together and shape into balls. Refrigerate for 1 hour. Melt 1 box semi sweet chocolate with 1/2 block paraffin wax. Dip balls into chocolate mixture; can use fork. Place on waxed paper to harden.

It is good to know that I am not crazy about craving choclate. It actually didn't hit until last month, when I noticed that B was eating more. My high school theatre teacher said that women crave chocolate because they need the iron. I don't know if it is true (probably not), but it makes me feel better about my cravings. I am not indulging a craving, I am giving my body some much-needed iron!

Wow these look so good! Too bad I'm not sure if I can have peanuts/peanut butter for Miriel's sake. Once I find out, I'll be all over this recipe.

Check out the Betty Crocker's Best Chocolate Cake recipe...divine!!! There is also a chocolate frosting recipe that I can give you if you'd like. I'm not sure if it's okay to post it on the Internet without permission though...:(
Or...have you ever tried a spoonful of peanut butter dipped in chocolate chips? Yum!
Or...chocolate chip cookie pie. I know that there are a bunch of recipes online that you could use for this one!

Maybe it's better to stick with the peanut butter balls so that you don't have a huge cake sitting in your kitchen for days. I guess you all could have company over to share the wealth with. :)

This has been a great hit in our house. It is crunchy, cold, chocolatey (or however you spell it), and since it is mostly cereal, I feel a little better eating it.

CRISPIX MIX SWEET MINGLERS:
Ingredients
1 package (6 oz., 1 cup) semi-sweet chocolate morsels
1/4 cup peanut butter
1/2 cup peanuts (optional)
6 cups Kellogg's® Crispix® cereal
1 cup powdered sugar
Directions
1. In large microwave safe bowl, melt chocolate at HIGH 1 minute. Stir and
heat 30 seconds longer at HIGH or until melted when stirred. Stir in peanut
butter and peanuts. Gently stir in KELLOGG'S CRISPIX cereal, until evenly
coated.
2. Place powdered sugar in 2-gallon zipper-type plastic bag. Add coated cereal to
sugar and close bag. Gently toss cereal mixture until evenly coated. Store in airtight
container in refrigerator. Yield: 16 servings
